Since its creation, F. Chauvenet has reflected its attachment to and respect for the Burgundian terroir in the making of its wines.
Bright gold. Fresh and elegant. Dominant aromas of citrus fruit reveal delicate notes of white flowers (acacia) and vanilla. Smooth and mineral. Good balance between acidity and suppleness.
It goes well with white meats such as veal or poultry in cream sauce, as well as many varieties of goat’s cheese. Its aromatic power means it can also match spicy and perfumed exotic dishes such as couscous, fish tajines, or sweet-and-sour prawns. Sushi is also enhanced by its minerality.
Ideally between 11° and 13°C.
This wine can be enjoyed both in its youth and after a few years of ageing (up to 6 years).
100% Chardonnay.
Hand-picking, sorting of the grapes, pneumatic pressing, then vinification in temperature-controlled vats and ageing in stainless steel vats for about 10 months.
The Pouilly-Fuissé appellation produces only white wines made from the Chardonnay grape variety. Located in the Mâconnais region, it covers 758 hectares around the 4 communes of Solutré-Pouilly, Fuissé, Vergisson and Chaintré. Pouilly-Fuissé is harvested on the exceptional site formed by the rocks of Vergisson and Solutré. Situated on the slopes and at the foot of these rocks, the vine takes its roots on stony scree and clayey-limestone soils from the Jurassic period. The vineyard faces East and South-East, at an altitude of between 200 and 300 metres.
