Since its creation, F. Chauvenet has reflected its attachment to and respect for the Burgundian terroir in the making of its wines.
Colour: Pretty bright ruby, garnet reflections
Bouquet: Notes of cherries, redcurrants, finely woody, elegant, very refined.
Palate: Beautiful attack on red fruits followed by pleasant structure and silky tannins, fine and delicate. Cherry flavors and notes of roasting (coffee) then continue on a very pleasant length.
Drink with sophisticated poultry dishes, patiently roasted and glazed, game, stewed or slowly braised, or simply roasted but also a couscous or a tajine with meat or poultry or even both. The intensity of Volnay allows it to blend well with flavoured cheeses.
Serve between 14 to 16°C.
100% Pinot Noir.
The grapes are harvested by hand and sorted manually on arrival at the winery. All the grapes were de-stemmed. Cold maceration for 4 days at 8° to 10°C. (46-50°F) Then, 15 days of alcoholic fermentation with regular punching down and pumping over (twice a day). Selected yeast used. Ageing in 100 % Burgundian oak barrels (French oak only) of 228 litres with 25% of news one. After 12 months of maturing process, the wine is racked and delicately filtrated for bottling.
The village of Volnay is located in the Côte de Beaune, South of the town of Beaune and neighbouring the village of Pommard, between two hills and protected from the winds, the vineyard of Volnay bear an ancient name. The name of this village stems surely from the Celtic word Vol. It translates a sense of roundness due to the geographical position of this village whose name can be traced back to the 12th century (Volnay). This appellation is part of the rare ones that only produces red wines. The Volnay is a feminine wine “par excellence”, racy it combines nobility, finesse and elegance. It is a well-rounded wine and delicacy that improves with time. The oolitic limestone is here pink in color with pale green inclusions and overlain by banks of schist.
